Some custom fields not visible

Description

A large amount (but not all) of our custom fields do not show up in the field name selection.

In our case I'm trying to use the field "Bevat gevoelige informatie". It's fieldId seems to be 10700 based on the url when editing it.
It's a radio button field with two options, "Ja" and "Nee". (The third option "None" is always present by default.)
I'm trying to add a validator to a specific step so that the field has to be filled with either "Ja" or "Nee"

The expressions I've tried are:

1 ({Bevat gevoelige informatie} = "Ja") || ({Bevat gevoelige informatie} = "Nee")

and

1 ({10700} = "Ja") || ({10700} = "Nee")

If I manually enter its name I get an error when saving:

1 Parsing of the expression has failed. Please check its syntax. You entered: ({Bevat Gevoelige Informatie} = &quot;Ja&quot;) || ({Bevat Gevoelige Informatie} = &quot;Nee&quot;). This expression will always evaluate to <b>false!</b> System message: Lexical error at line -1, column -1. Encountered: " " (32), after : "{Bevat"

If I try to work around it by entering the fieldId, the expression always evaluates to false. In that case the logs display:

Am I missing something that allows me to use these custom fields? I can provide more information if you tell me what you would like to see.
